My hubby, Jayvee <i>was </i>a hamburger fan, big time. He tried burgers in every city/country we traveled. The bigger and thicker the burger was, the more he liked it. But that WAS before he dropped beef, pork and chicken meats from his diet. He turned pesco vegetarian when he became attached to our chicken pets after months of keeping chickens in our backyard. Now, the challenge is on me to come up with meatless dishes that are equally satisfying for this ex-meat lover - specially meatless burger.</div>

About 2 months ago, we visited a newly opened a local Grill House where hubby ordered a black beans burger and it was delicious. So tasty that we were back in the same restaurant three times already. The burger was not cheap so I decided to make a homemade version. After a little over an hour of preparation and pan grilling, my homemade black beans burgers were a hit! </div>

To make a perfect patty shape out of the black beans and corn mixture, I used an egg and Panko breadcrumbs {just because that's what I have in the pantry}as binders. Since it is too cold to grill outside, I pan-grilled the patties and voila .... tasty meat-less black beans burger for someone who used to love all-beef burgers!</div>

1 can {15 ounces} black beans, rinsed and drained</div>
<div style="text-align: justify;">
1 medium onion, chopped</div>
<div style="text-align: justify;">
2 cloves garlic, minced</div>
<div style="text-align: justify;">
1/2 bell pepper, chopped in tiny squares</div>
<div style="text-align: justify;">
1/2 cup corn kernels</div>
<div style="text-align: justify;">
2 tbsp mayonnaise</div>
<div style="text-align: justify;">
3/4 cup Panko breadcrumbs {or any kind of breadcrumbs)</div>

3 tbsp finely chopped fresh coriander/cilantro {or parsley}</div>

1 tbsp hot pepper sauce</div>
<div style="text-align: justify;">
2 tbsp taco seasoning</div>

1 tsp freshly ground pepper</div>

2 tbsp oil, divided</div>

Pre-heat oven to 350 degrees F. Spread drained beans on a foil-lined rimmed baking sheet and roast in the over for 15 minutes or until beans split open. Let it cool.</div>

Heat 1 tbsp of oil and saute onion, garlic and pepper. Set aside.</div>
<div style="text-align: justify;">
Transfer cooled beans. corn kernels, sauteed onion, garlic and bell pepper in a food processor or electric food chopper and pulse for 6-7 times</div>

Transfer mixture in a large bowl and add the rest of the ingredients <b><i>except</i></b> oil.</div>

Mix well and shape into burger patties {about 4 to 5 patties}</div>

On a frying pan heat remaining oil and cook burgers over low to medium fire {about 5 minutes on each side}</div>

Since I discovered the wonders of natural pure essential oil and a little help from my kitchen supplies, I have been mixing my own body care pampering essentials like <b>bath salts (<a href="http://meiannguerrero.blogspot.ca/2016/01/diy-lavender-bath-salt.html" target="_blank">find the post here</a>)</b>, body scrub and lip exfoliant. True, you will be investing a little amount of money when you buy your pure essential oil but a small bottle goes along way. In the end, you will still save compared to buying expensive commercial body scrubs. You can also use the same essential oil to make bath salts, room/pillow spray, massage oil. etc.</div>

Body scrub basically contains 3 components : body oil, raw exfoliant and essential oil. To be honest, essential oil in body scrub is optional {first 2 ingredients are a must} but, since I am making something to pamper myself, the scent of essential oil is bliss!</div>

<div style="text-align: justify;">
<b><i>Body oil</i></b> : the most commonly used oil in home made body scrubs are olive oil, coconut oil, grapeseed oil, jojoba wax, sweet almond oil, rose hip oil and avocado oil. These oils vary in prices, thickness and access. Personally, during winter, I prefer grapeseed oil because its great for repairing broken skin cells (particularly on my heels} and its great for rejuvenating the skin. Its light smell does not overpower my essential oil. Some find its consistency too thick. Again, its a matter of preference and budget too.</div>

<b><i>Raw Exfoliant</i></b> : you have all of these in your pantry! Salt, sugar and coffee. Again, the choice is depending on a number of factors - roughness, time to dissolve in oil, and which part of the body you are going to use it. Sea salts tend to be rough for those who have sensitive skin but it is a great exfoliant specially for the knees elbows and feet. Sugar is best for those with sensitive skin. Although softer that sea salts, it still an excellent tool to remove dead skin. Remember, granulated sugar is softer that coarse sugar. So if you are using it for your face, avoid coarse sugar. I prefer Turbinado Sugar for my body scrub. Also, bear in mind that sugar tends to dissolve easily in oil, so don't make a big batch if you don't intend to use it often. I don't like to use coffee for the simple reason that it leaves a mess n my tub.</div>

<b><i>Pure Essential Oil</i> </b>: some of my favorites that I have in my stash are lavender, mandarin, vanilla, peppermint, eucalyptus, rosemary and lemon grass. I either use it as a single scent or combine two scents together. Buy in reputable stores.</div>

Just want to share this tips I read regarding essential oils :</div>

<ul>
<li>Do not apply directly to skin. They are highly concentrated and can irritate skin and cause rashes.</li>
<li>Buy essential oils that come in dark bottles. This will prevent oil from direct light/sunlight exposure. It guarantees longer shelf-life.</li>
<li>Use only a few drops. You just want its mild scent and not an irritant to your nostrils.</li>
<li><b><i>There are some oils that pregnant women should avoid. Consult your physicians before using any oil while pregnant.</i></b></li>

The most challenging "to do" at home after a 4-day back to back business trips is to cook a decent dinner. Hubby won't mind if we go out instead or buy take out however I take it upon myself to make an effort .... after all I din't see my kitchen for days. The most challenging part is not the fact that I am tired to the bones {can somebody tell me what is it about airplane rides that makes you tired?} BUT the fact that there seems nothing in the fridge that translates into "dear, we are having a nice I-am-finally-home-dinner". </div>

When I opened our fridge last night, this is what greeted me .... a couple of ripe avocados, half a slice of lime, half a block of Gouda cheese, veggies that have seen better days and leftover tuna flakes and mango chicken. Yeah, a fusion of Italian, Chinese and Mexican. </div>

<span style="text-align: justify;"><i>Mash {make sure to leave some lumps} 2 ripe avocados, toss in about two tablespoons of minced onion {red onion is preferred}, chopped half tomatoes {seeds and juiced removed}, 1/2 cup chopped cilantro/coriander {leaves and stems}. 1 jalapeno pepper, chopped {I have non of this today so I just used chili flakes}, 2 tbsp lime and salt and pepper to taste. Just mix all ingredients and serve.</i></span></div>

<b><u>Leftover Tuna Quesadillas</u></b><br />

<b>Ingredients {makes 4}</b><br />
<b><br /></b>
4 pieces small tortilla<br />
8 tablespoons re-fried beans {canned}<br />
2 {85g} cans Clover Leaf gourmet flaked light tuna {I used sun-dried tomato and basil flavour}<br />
1 small red onion {thinly sliced}<br />
1 cup grated cheese<br />
1/2 cup coriander/cilantro leaves , chopped<br />
<br />
<b>Procedure</b><br />
<br />
Spread 2 tbsp re-fried beans on tortilla {make sure you spread the beans only on the half potion of the tortilla, leave the other half empty for easy assembly}.<br />
Add about 2 tbsp tuna on top of beans.<br />
Add sliced onions.<br />
Top with grated cheese.<br />
Sprinkle with coriander/cilantro leaves.<br />
Fold the other half of tortilla over toppings.<br />
Spray cooking oil on a heated non stick pan.<br />
Cook quesadilla over medium heat about 2 minutes per side or until crisp.<br />
Cut quesadilla in half and serve with guacamole and/or salsa.<br />

It s inexpensive and the possibilities are endless ... <i>sinigang</i> {Filipino sour soup}. <i>gamjatamg</i> {Korean spicy soup}.<i> puchero </i>{Spanish stew/soup}, etc. Here at home, I would normally cook a huge batch of pork bones to make soup stock then I would take the meat from the bones {which is very tender after boiling for an hour or so}.</div>

2 tbsp olive oil<br />
1 medium onion, chopped<br />
2 cloves garlic, minced<br />
1 cup soup medley {lentils, dried peas, barley, long grain rice}<br />
1 1/2 cups pre-boiled pork bone meat {see recipe below}<br />
4 tbsp tomato paste<br />
1 tsp dried oregano<br />
1 tsp dried thyme<br />
1 tsp dried sage<br />
8 cups pork bone broth {see recipe below}<br />
1 tbsp sugar<br />
salt and pepper<br />

<b>Procedure</b><br />

In a stock pot, saute 2 tbsp olive oil, garlic and onion over medium heat until onion is translucent</div>

Add soup medley and coat with oil while stirring for a minute</div>
<div style="text-align: justify;">
Add pork bone meat, tomato paste and all the dried herbs. Cook for a minute while continue stirring</div>
<div style="text-align: justify;">
Pour in pork bone broth. Mix well. Cover the pot and simmer for until grains and lentils are tender. Stir once in a while to prevent bottom from sticking.</div>
<div style="text-align: justify;">
Seasoned with sugar, salt and pepper.</div>
<div style="text-align: justify;">
Serve while hot.</div>

<i>To prepare <b><u>pork bone soup stock</u></b>, just combine 2 kilos of pork bone with a bit of meat on them, 15 cups of water {add more if you wish} 2 stalks of celery, 1 chopped onion and 1 carrot {cut in half}, salt and pepper in a huge stock pot. Boil over medium heat for an hour or until meat is very tender. Strain to separate the stock which you can freeze, Take the meat from the bones which can also be frozen for future soup recipe. Discard bones and vegetables.</i></div>

Making my own body pampering essentials is on my bucket list for a long time now. Since one of my January goals is to "do more and dream less", I thought why not start working on these body pampering essentials like bath salt, body scrub, massage oil and lip exfoliant. So, yesterday while it was snowy and windy outside, I was busy in the kitchen like a "scientist" mixing a bit of this and a drop of that ... after less than an hour, I checked off another item on my bucket list! And the scents of lavender, lemongrass and peppermint in the kitchen was heavenly!</div>

These lavender flowers I harvested from my garden and air-dried last fall were finally put to use. I initially planed on making my own lavender essential oil but I still don't have enough plants to produce the amount of flowers I need {maybe this year}. </div>

Here's what you need to make your own Lavender Bath Salt:</div>

1/2 cup baking soda</div>

40 drops lavender pure essential oil </div>

In a dry bowl, combine all ingredients and mix until well combined. Store in covered jar to prevent moisture. Now you can enjoy a fragrant and soothing hot bath using this homemade bath salt.</div>

Back in June, I shared this asparagus recipe given to me by one of the farmers at Port Perry Farmers' Market. This appetizer is best served right after taking the asparagus from the oven. It is crispy, tasty and when dipped with aioli, the freshness and tabginess of the lime will balance the saltiness of the Parmesa cheese. Best served with chilled Pinot Grigio.</div>

Suffice to say that I am reaping the benefits of preserving these precious herbs back in September! Fresh or dried, I have no problem finding oregano, thyme. basil, mint, rosemary and tarragon when I need them for my recipe or two. Everything is either in my freezer in color-coded container {for fresh herbs} or in mason jars in the pantry {for dried herbs}. </div>

The champagne bottle has been popped and enjoyed, the glow and colors of fireworks were now mere memories and the first page of 2016 calendar had been turned. YES, today is page 1 of a 365-page-book called "My Year" - all but blank pages for now but waiting to be filled with daily stories, opportunities, challenges, successes and lessons learned resulting from choices made along the way. For somebody who likes to document these things like me, it is hard to find a planner that suits my needs {oh yeah, I have an iPad, iPhone and a laptop but this girl loves my paper where I can scribble on, paste things on and everything in between}. Since October I was searching for my ideal 2016 planner where I can include work-related appointments, meetings and travels, to do lists, personal life documentations {for project life} and space to write new ideas and recipes for my blog BUT couldn't find one. Since my demands are too many and specific, I decided to make an all in one 2016 Planner which I named "Epic 2016"!</div>

A pine tree in the front lawn fell a couple of months ago resulting to cut woods, pine cone scattered in the parking lot of the public library, woodland plate set from many moons ago and Christmas tree trimmings. The result? A woodland tablescape!</div>

Every year, we start decorating as early as November 1st and always, our "Belen" <i><span style="font-size: x-small;">{Tagalog word for Nativity Scene}</span></i> is the first one taken down from the attic and arranged on a table in the dinning room. I can't imagine not doing the Nativity scene ahead of other decorations in the house, after all Christ's birth is the reason for the celebration.</div>

There is nothing more rewarding than making something beautiful out of the generosity of mother nature! The other day, I was finishing my Christmas woodland tablescape when an idea bulb flashed in my head. Armed with my small pruning shear, I went to the backyard {my favorite source of materials in most of my projects} and gathered vines, pine tree leaves and cones. After 25 minutes, here's what I have came up with : 6 woodland-inspired table napkin rings without spending a single cent.</div>

1. Cut about 12 inches of pliable vine/tree branch. Using a paper towel tube as guide or mold, make a ring out of the vine/tree branch.<br />

2. Join both ends of the vine with a glue gun. The ring should be sturdy to hold a cloth table napkin.<br />

3. Take pine tree leaves and pine cones {still attached to the branch} and tie them with jute twine {or other available twine you have on hand}<br />

<i>My guide when hosting this kind of party are :</i></div>

<li><i>Serve different kinds of cheese - remember some like blue cheese while others hate it. Be safe and offer different options. I usually have intense Blue cheese {I'm one of those who like it!} like Stilton, nutty and sharp super-aged cheese like Gouda, and soft and creamy cheese like Brie and Gournay.</i></li>
<li><i>Label your cheese : I like using black slates from the hardware store as cheese board because I can label the cheese with chalk directly on the slate.</i></li>
<li><i>Set out a separate knife for each cheese to prevent mixing flavours. Cheese knives are great but butter knives work well too.</i></li>
<li><i>Crackers or artisan bread, honey, jam, nuts, fresh fruits like grapes and/or fig and dried fruits like apricot and/or date add depth to a cheese plate.</i></li>
<li><i>Have red, white, sparkling wines and non alcoholic beverages available for everyone.</i></li>

For this special occasion, I also made a cinnamon bark with star anise as tea stirrer instead of a regular teaspoon. Sparkling wine is always a good idea too! When dear hubby was already comfortably sleeping in the comfort of our bedroom under the "spell" of a potent pain killer, I channeled my adrenaline rush to my kitchen and whip up with this delicious dish that will definitely be part of our Christmas feast.<br />

Pan seared salmon fillet is always a good idea but why not kick it up a notch by sandwiching a sauteed spinach and mushroom in between two salmon fillets and wrap it in store-bought puff pastry? After 30-40 minutes in the oven, you will have a holiday feast-worthy Salmon & Spinach Wellington!<br />

Here's how you do it:<br />

Saute small chopped onion, 1 package of frozen spinach {thawed and squeezed all liquid} and 10 pieces of button mushrooms {chopped} in a heated pan with 2 tbsp oil.<br />
Season with salt and pepper.<br />
When done, let it cool them set aside.<br />

Cut 4 pieces of salmon fillet {about 3x3 inches per piece}.<br />
Season both sides of the fillet with salt and pepper.<br />
In a small bowl, mix 2 tbsp of mayonnaise and 2 tbsp of Dijon mustard.<br />
Spread the mayonnaise and mustard mixture on top of all 4 fillet pieces.<br />
Scoop cooled sauteed spinach {about 2-3 tbsp} on top of two fillets.<br />
Cover the filling with the other fillets.</div>

Cut pastry sheet in half. </div>

Place the salmon in the centre of the the pastry and fold the pastry over the salmon.</div>

Place the roll seam-side down on a baking sheet.</div>

Cut several small slits on the pastry to allow steam to escape while baking.</div>

Beat 1 egg and brush it on to the pastry.</div>

Bake in the preheated oven until the pastry is golden brown {about 30-45 minutes}.</div>

Our tea room is surrounded with dark wood wainscoting and built in shelves filled with our favorite books. I have been begging my hubby to paint the wood but to no avail {I wonder why men prefer dark wood? Or is it just my hubby?}. The left side of my woodland spread highlights my favorite decor ever - abandoned bird's nest which I collect from our front and and back yards every fall. I also included a scene with reindeer and chipmunks who love to make their summer "houses" near our chicken coop. All the elements are elevated using the cut pine wood trunk in various heights.</div>

Inside the Birdsong kitchen, the familiar sound of my pots and pans are undeniable. <u><strong>Cheese, Chive and Cream Scones</strong></u><br />

2 cups unbleached all-purpose flour<br />
1 Tbsp baking powder<br />
1 Tbsp sugar<br />
1/2 tsp salt<br />
5 Tbsp very cold, unsalted butter </div>

1 cup mature cheddar cheese, grated</div>

1 cup heavy cream {more for brushing}<br />

<b>Procedure:</b><br />
Preheat oven to 425 F (220 C).<br />
Place flour, baking powder, sugar and salt in a bowl and mix. Cut in butter until it resembles coarse meal.<br />
Add cheese ans chive and mix thoroughly.</div>

Stir in heavy cream until it comes together in a shaggy ball. It will still have lots of loose, sandy pieces. If you the mixture too loose and sandy, you can add a little bit more cream to bind it a bit more — it shouldn’t affect the outcome if a bit more cream is added.<br />
Place batter on a floured surface and roughly work it into a ball.</div>

Press the ball down into a rectangular shape.</div>

Fold the dough like you’re folding a business envelope (in thirds, first right fold to center, then left fold to center). Notice that it is still quite shaggy and loose. That’s OK.</div>

Now press the dough down into a disc about 2-3 cm in height. </div>

With a sharp cookie cutter (I used circle), cut out scones <span style="font-size: 13.2px; line-height: 18.48px;">and place them on a baking tray that is lined with parchment paper.</span></div>

It is that time of year when all I see in my favorite Farmer's Market is quash! Yes all of them : pumpkins {with matching huge pumpkin patch!} butternut, spaghetti, delicata, buttercup, ambercup, name it and you see it! Over the years, I tried cooking each kind of squash to find out which I like best. I find that they differ in moisture content, texture and of course taste. My 3 favorite kinds are : <b><i>ambercup, spaghetti squash</i></b> and <b><i>acorn</i></b>. I find them buttery. flavorful and moist, One of their common denominator that I like the least..... ALL of them are hard to peel! </div>

If I am cooking soup and want to serve it in the "squash bowl", I prefer cooking with acorn. Its size and shape are perfect as a serving bowl without compromising the flavour. For this soup recipe, I used roasted acorn. That way, I don't need to peel and was able to save the cup for serving.</div>

Before baking, cut acorn squash crosswise in half. Remove seeds. With a sharp knife, carefully trim both ends of squash so that it can stand without being wobbly. Place squash on a cookie sheet {with trimmed ends at the bottom of the sheet}. Sprinkle each squash with salt and pepper and bake at a pre- heated 350 degrees F oven. Bake for 30-45 minutes or until tender. When done and cool enough to handle, scoop out meat and set aside for soup recipe below. </div>

<b><u>Acorn Squash Thai Soup</u></b><br />
<br />
<b>Ingredients</b><br />
<br />
3 cups meat of roasted acorn squash {I previously roasted 2 big sized acorn squash. See procedures above}<br />
2 tablespoons cooking oil<br />
1 small onion, chopped<br />
5 cloves garlic, minced<br />
1 big thumb-sized fresh ginger, peeled and thinly sliced<br />
2 bay leaves<br />
1 can {400 ml} good quality coconut milk<br />
2 and 1/2 cups vegetable broth<br />
2 tbsp fish sauce<br />
2 tbsp green curry paste<br />
1/2 cup fresh cilantro leaves<br />
salt and pepper<br />
<br />
<b>Procedure </b><br />
<br />
In a large cooking pot, heat cooking oil over medium heat,<br />
Saute onion, garlic, ginger and bay leaf. When onion is cooked, add roasted acorn squash. Mix and cook for 2 minutes to incorporate the flavour.<br />
Add coconut milk, vegetable broth, fish, sauce, curry paste and cilantro leaves. Stir. Simmer for 5-10 minutes while stirring regularly.<br />
Turn off heat. Puree using am immersion blender {or puree by batches using regular blender}<br />
Re-heat on the stove and season with salt and pepper.<br />
At this point, you can add more broth to achieve desired soup consistency.<br />
Serve on acorn "squash bowl".<br />
